So, we just have to pick a whole new lineup for this weeks games, correct? I'm assuming that we are not waiting for these teams' games to be made up, and then add those player's score to this weeks game.

Correct, all game weeks are dictated by whatever the Premier League fantasy site says. You can have double match weeks.

As Vicks said, no points will be retroactive back to this game week. You'll double up on those players in a future week when they play twice.
