"Wood has been used in cheese making in Europe for thousands of years, from day one of cheese," Roelli said, calling it the "pillar" of his "niche business. If [the ban] goes through, it would severely hamper what we are doing at this point. 85% of the product I manufacture is made to be aged on wood. We don't have a plan B. We would have to start from square one again and reinvent our business."

(p.s. what are the odds that this poor bastard gave money to a Tea Party organization?)

Finally, everything the FDA said is true and obviously would require an exemption in the act to allow the artisan cheese industry to use the wooden boards.

Great way to run things.. pass bills with ubiquitous restrictions and controls, then exempt certain groups, businesses or industries with which those in power deem "worthy" or politically/financially advantageous.

Sounds a lot like how health care and energy are being run these days.

It's like these people don't live on planet Earth. Because if they did, they'd be against this shite just like all of us for the same reasons.

It's like they live in some alternate universe where they aren't affected by the stupid arse shite they try to implement.

You know what else harbors bacteria, our hands. And our clothes also harbors bacteria. So does dishwashers, plates, utensils, etc. Maybe the FDA can just ban all this as well?

to determine whether certain types of cheeses can safely be made by aging them on wooden shelving.

Thousands of years of cheese making not enough evidence? Pure stupidity.

We are a nation of whiners. Y'all find anything to whine about. Whining about cheese making regulations.

Agreed. I like how you reinforced your argument by whining about people whining about ridiculous and unnecessary government regulations.
