I know the EU is mostly cannon fodder but are there any books or series before phantom menace or after ROTJ that will most likely have some relevance to the movie based on y'all's opinions.

I thought Disney said that as far as they are concerned none of the books happened ?

While movie audiences were left to wonder about the world of Star Wars that lived outside of the films, readers of the franchise’s ‘Expanded Universe’ had dozens upon dozens of novels rounding out each corner of the universe with George Lucas’ blessing. But when Episode VII executive producer Kathleen Kennedy explained that in order to give their upcoming films some freedom, they would not be following the future presented in the novels – thereby rendering the Expanded Universe non-canonical – fans were understandably upset.
As a result, the only canon stories that exist as fact in the Star Wars universe are the films, The Clone Wars animated series, the upcoming Star Wars Rebels series, and future novels. A selection of senior staff was on hand during Comic-Con 2014 to explain why fans shouldn’t see the EU as dead or meaningless – since they themselves still view it as a valuable resource.

Might be the case but still would be nice to get some background on Luke, leia, Han, etc.... Afaik hour wading through a bunch of EU book series.

I started reading a new dawn recently. It's pretty good so far.they have new cannon books and this is one of them. They have a book about tarkin and one about Luke as well:

None. The books are mostly not considered part of canon. And Disney will not be acknowledging or using any of them for this movie
Doesn't mean they're not good books worth reading though. Just understand they don't actually matter

The EU will provide depth to all of those characters and most of the books are good reads.
None of it will be relevant to the films though so you don't need to "waste" a second reading if that's all you're concerned with.

Except for the new cannon books they're releasing which he could read to get better insight into the universe.
