How busy is this place during the week? If I get there at 11:30 do I even have a shot at getting some BBQ? When is the cut off?

We went on a Wednesday, got there at 10:15, were like 8th in line.
Eta...if you get there at 11:30, you'll get some, but you'll probably wait an hour and a half.

Yeah, I wouldn't wait until 11:30. Best course is to get there early. Like the other person said, try 10:15-10:30. You'll be eating by 11:30 and get what you want.

Only been once. Arrived about 1PM and waited about 15-20 minutes. Sold out of beef ribs which I really wanted when I was about 3 people back from the counter.
But I still got some of the brisket so it was well worth the wait.

It's not waiting till 11:30. 5 hour drive from LC. Trying to figure out what time I need to leave. I guess 5:30 AM is what I need to shoot for.

go to John Mueller's
This. Tip is to get there before 1:00 ish. Once he finishes cooking what he portioned off for the day, it's gone.
I recommend going to the free brewery tour at Hops and Grain. It's only a block away.
