If it was just grilled cheese, I would agree, but some of the grilled cheese sandwiches sound pretty awesome. A grilled cheese place just opened last month a few blocks from where I live. Here is the list of grilled cheese sandwiches they offer. Perfect for lunch...

The owners are great chefs. I think depending on how involved they are will determine the success. They seem to be hitting it head on leaving most of Hot Tails management up to other family members.
