Black eyed peas recipe?

I have a recipe I am probably going to use, but I was wondering if any of you have any good go to recipes you use.

I quit making black eyed peas after I discover Mrs. Silvias Black Eyed Peas in the can........ they're really good.

I cook them every New Years day. I used a crock pot and they come out killer. 1lb beans, 2 Qts vegetable stock, 1 lg onion, 1 bell pepper, 3 stalks celery, 2 toes garlic, 1 lb smoked sausage, 1 ham bone(left over from New Years eve) salt, pepper, bay leaf. I cook me on high for 6 hrs. The last hour I remove the cover and smash a spoon full of beans to thicken them slightly. gets rave reviews every year.
