Ok so I bought a 2.5 lb pork shoulder this morning and I intend on smoking it tomorrow in my charcoal smoker.

From what I have read it should take about 4 hours to cook.

Earlier today I rubbed it down with mustard and some Memphis spice rub that was recommended in an earlier thread.

Anything I should be concerned about tomorrow?

Plan on putting it in once the temps reach about 225-250F. Smoking it with a mix of Pecan and Cherry wood.

Sounds good

Just cook to proper internal temp. Get a meat thermometer to gauge. Better for low and slow to.open pit as little as possible.

Shoulder is tough to screw up because of so much fat
