Powder crawfish seasoning/boil - oil vs water based?

Had some pretty tasty crawfish here in Kingwood this afternoon and was asking about what the chef did, and he said he used 2 powders. One was oil based and the other was water-based. He said he used the water-based powder seasoning to cook with in the water, and used the oil-based powder to cover the bugs and let them absorb the spices for 20 minutes in a cooler.

Never heard of different powders between oil based and water based. WTH is this?


.....I know it is taboo to put powder on after-the-fact, just wanted to see if anybody had heard of this oil versus water powder bullshite.

Never head of it. Im assuming Kingwood is inTexas right? I'm just wondering what an "oil based powder" looks like. Sounds like it would be damn close to a paste.

If you're gonna do the cooler thing for 20 minutes, then why not let them soak for 25? Sounds stupid.

Ya I had never heard of this, sounded like he didnt want me to know his recipe or he was just a helper cook who didn't know what the hell he was talking about.

well if he's just coating it with seasoning after the boil, he has no clue what he's doing.


the only thing that does is make a burning red ring around your mouth and gives it a gritty texture.
