What do you cook on camping trips?

Me and the family are campers but I think we go after the basics too often with meals. I'm looking for some interesting new twists for this weekend's trip. It's a boat-in site so excess gear for cooking is no big deal.
Any ideas for me are much appreciated.

We used to camp on Wine Island. My brother and all his friends were Eagle Scouts so we ate good and were prepared. Wrap potatoes in foil and shove into the fire. We would surf fish and grill and fry specs. Catch a shrimp boat and trade a few beers for a few pounds of shrimp and make a sauce to go over the fish.
I always carry a bean pot. Soak them before you leave, dry well and put in ziploc to carry. I also always kept chicken Bouillion cubes which took up little space and always added flavor even breaking them in half. I also like to carry fresh green beans, which you can get at SAMs packaged that travels well. Butter, lemon, salt and pepper and you are good.
Don't forget the coffee.
I also have a can cooker. I'll find a pic.

Jambalaya.
Just cut up all your meat and veggies ahead of time and bring your cast iron and all other ingredients. It's the best camping food.

These are amazing. I have this one and a smaller one. Cabelas carries them and this was about $75. Dump everything in, corn, chicken, potatos etc... Some liquid seal and put on fire. Hour later dump it out and eat. Tons of recipes. I've done beef stew even. Cool to have if you camp with open fire and have room. I always am in the boat or a vehicle so I'm like you, I have room to carry stuff.
Eta: here it is for $60.00. They are solid as can be. Google it and look at the recipes.

You can do jambalaya in it. Cool as can be. The big one will feed a bunch. I've used my small one for years. It can go on a grill, burner even your cooktop.

Carry a metal grid shelf out of an old frigerator. Lightweight, use for steaks, pork chops and burgers.
