I appreciate everyones suggestions 
I am going to ease into it then work my way up.
I live in Shreveport, so I have a few different options for restaurants. I also noticed that we are supposed to be getting a "Rock-n-Sake" sometime next year.

You don't necessarily have to ease into it if you don't want to. Just do like I said, and go with someone that knows what they are doing.
