Whose using all the leftover bird to make a gumbo?

I will try to post pics later

First time I'm trying this with a fried turkey

Yesterday afternoon I de boned my turkey and starting making a srock with the intention os making a gumbo. I went into my cupboard to get something and seen a pack of pho seasoning........ my turkey stock for a gumbo turned into turkey pho. It turned out pretty damn good too.

I find thy the carcass from a fried turkey makes the best stock for the gumbo

Yup, tomorrow.

Turkey makes some of the best stock.

Anyone use deer sausage in their gumbo?
My son just gave a bunch of links. I've never used it before in my turkey gumbo.
