Looking for a good duck and jalapeno popper recipe

The duck should shine through, which is fairly difficult when bacon and cream cheese is involved in any recipe, but...... Mix the cream cheese and finely diced jalapeno peppers in a bowl. I dont like making "jalapeno boats" because it takes to much duck flavor away. Cut about a 1" strip of duck breast across the grain. Butterfly from the top side of the strip about 1/2 way down the middle and fold open. Stuff with cream cheese mixture. Wrap in bacon. Baking in oven or BBQ pit yield great results.

Melt some pepper jelly, red pepper flake, butter and honey in a skillet with a shot of bourbon for a really good dipping sauce.

Google the delta waterfowl recipe.

I don't think it matters what you do, but from experience I recommend three things that can be applied to any recipe:

- half freeze the cream cheese (will aid from flare ups)
-pre cook the bacon halfway in microwave (when bacon is fully cooked your duck will be medi rare to med)
-use a square fish grill basket and put all poppers in there, that way you only flip once versus using tongs to flip 30-40 individual poppers

You can do this or just buy cheap thin sliced bacon. The only time I prefer cheap bacon over Wright's is when making these.

As you are grilling, glaze with honey. Makes a HUGE taste improvement.

This or anything you cook will be overcooked if you fully cook the bacon

The key on the duck wraps recipe is to fry them and not grill them. They stay together better and don't come apart.
