Please give me your fried duck quesadilla recipes

First make pico and set aside in bowl. All minced fine -
Yellow Onion
Jalapeno
Garlic
Tomato
Lime Zest
Lime Juice
Cilantro
Black Pepper
Olive Oil

Grill diced yellow onions, bell peppers, chopped garlic and thinly sliced (1/8") quartered and diced smoked sausage of your choice (not too much sausage because you want duck to shine through) Season this vegetable and sausage mixture with ground cumin, chili powder and ground coriander. You want this to cook down quite a bit and get pulpy.

Ducks -
Slice breasts in 1/2" strips and season with sea salt and ground black pepper. Lightly dredge in flower and pan fry in skillet for about 1min 30secs on each side. (high heat to get a good crust but keep rare in middle)

Quesadilla Assembly - (preheat oven to 350)
Smear butter on surface of baking pan.
Line baking pan with tortillas and add thin layer of sharp cheddar. Add thin layer of sausage mixture on top of cheese. Layer completely on top with fried duck strips. Layer with fresh pico. Layer with sharp cheddar. Place tortilla on top and brush (smother) with melted butter. Bake about 20 mins and should get a perfect gold brown flaky crust, cheese will be bubbly, and duck will be a nice medium. We made these last wk.
