Monday, no doubt.
With Friday off, once you hit 5pm on Friday you're basically on a normal weekend.
With Monday off, you get the normal weekend but can always look ahead to that extra day off at the end.

Friday.
I use Sunday as a decompression day so I'm usually ready to go on Mondays. If I took Mondays off, I'd just get bored.

Friday. I don't even like Monday holidays, comparatively. Funny thing is, I hate Mondays like hell, but I'd rather work that than Friday.

Friday. If so, you have two "Friday nights" (Thursday and Friday) whereas if off Monday, you have two "Sunday nights" which have a different feel (end of weekend downer).
