I'll have to find the article I read about how grocery store garlic can be very old, often from China, and subpar.
I'd like to think that Whole Foods has quality, if not fantastic, garlic, though.
Regarding differences you'll notice:
1.) The clove opens so easily, I can take every clove out of a head in 45 seconds with just my hands.
2.) The taste is pungent, but never bitter, and is so much better in things that use raw garlic (dressings, caponata, etc)
3.) The flavor gets deep and mellow, almost in a umami kind of way

Interesting. I may look around for fresh, local grown.
I know that pressed garlic seems to have a stronger flavor than diced or minced. Garlic presses are just such a pain to clean.
