Did this tonight and it was outstanding.

I went 200-225 for 2.5 hours over oak to give a little more smoke then added a coating of BBQ sauce and moved it over the coals for 20 minutes. I used a jalapeño buttermilk recipe I found online.

I'll never bake it again.
