Nothing special really. I cut the backstrap loin in a small enough piece to fit in a cast iron pan. For seasoning I just used salt and cracked black pepper. To cook it, I seared it in a cast iron on high heat for 3.5 minutes on each side then put the cast iron in the oven to finish it off at 400 degrees for 6-7 minutes. In this case it didn't come out exactly as I wanted it too. The edges were too well done and middle was rare. I prefer it medium rare and a little more evenly cooked. Next time I will sear it for less and finish it off in the oven for longer at a lower temperature. This piece was from a 210-215lb buck so it was a little bigger/thicker (probably 2in thick) than the last few deer I've killed. You just have to asjust your cooking time for the size of the meat. For the sauce I did a chimichurri. Here is the final product.

Pretty good. Pretty hoppy. I like it better than All Day TBH. Its sort of like an Imperial Envie. Similar hop profile.
