What are some benefits of going +2 on my set of irons. I do hit the ball pretty high, going +2 would give me a lower launch right?

its all about spin loft at impact. if not in the correct position at impact you could take all the loft off your irons and would not make a difference

Fix the flaw in your swing or perhaps look at other shaft options that can affect launch angles before you go bending those things.

That's what I am looking to do. I'm pretty sure I have it worked out as to what I have to fix swing wise. I just don't know if there are any benefits from this

Sounds like you're talking about changing the lie angle, not the loft.

The loft is the angle of the club face. For example, my PW has 46 degrees of loft.

The lie angle is the angle formed by the sole of the club and the shaft.

And don't try bending your clubs if they are cast. Forged irons will bend. Cast will probably crack.
