Winter Farmers Market, Wanting to Expand My Winter Fresh Local Food Options

I enjoy shopping at the Franklin Farmers Market LINK in Franklin Tennessee. I'm fortunate to live in big agriculture state here in Tennessee which has a large number of local farmers who come to this farmers market.
The winter farmers market is starting this coming Saturday and will run all winter long. Here in Tennessee it gets cold for farming. I'm impressed with so many root vegetables that are already in market. You can see what kinds of winter veggies are being grown here in their market photo gallery LINK. The local Tennessee farmers do a really nice job with their produce. I'm wanting to learn how to cook more with winter produce items.
Does anyone have any ideas or recipes they enjoy using kale, butternut squash, other winter squashes, beets, turnips, etc? I've tried this week mixing kale and butternut squash with cranberries and almonds and it's quite good with a light oil an balsamic dressing. I really like the butternut squash and plan to try a butternut squash soup.

I always keep a parsnip, cube to 1/4" cubes and caramelize it in butter and sugar for croutons on top of the soup.

It's getting down to 29 this weekend. I think beef stew with all local meats and veggies will be good. Will try the parsnips.

If you like kale try collard or mustard greens. I much prefer the latter two.

I throw a handful of kale or swiss chard in soups quite a bit. Or just saute it a little bit in some olive oil with a little bit of sea salt and a splash of lemon juice for a wilted kale side.
Roasting the root veggies is always a given. I like to swap back and forth between savory and sweet when I do.
