I always cook corn with my flank steaks as well. I usually mix corn, red bell pepper, and shallots and add a dash of garam masala and sauté in a skillet.

I like skirt but it gives my jaw a workout. I cooked one from Whole Food the other day and it was like meat bubble gum. Cooked it to rare at about 800* on my primo.
