The moon shines blue in Evangeline parish & the blind hogs feast on acorns. I can go to any meat market in Evangeline parish, probably St Landry parish also, & buy as many hens as I would like. Even Champagne's & a Piggly Wiggly carry fresh hens in the meat department.

Well aren't you special. I can find them too if I really look for them. Point being they are not nearly as easy to find around here as they used to be because the chicken houses aren't growing them like that much anymore.

I am special, I live in the land of plentiful hens.
I Didn't mean to rustle your FDB jimmies, I was just saying it is not as uncommon as blue moons and blind hogs finding acorns to get a hen in Evangeline & St Landry parish.
I hope this doesn't upset you but roosters are also an "easy find" where I come from.

Trying to improve taste.

If you are talking seafood gumbo, trying adding some fish sauce. It's pretty much liquid salt, so add a little at a time.
