I see people selling them now, but mine are still very green. Are there different varieties that ripen early?

I planted 3 different varieties for that very reason- to spread out the harvest cause I enjoy them so much. The later bearing are better, I've read. The cold temps actually trigger some sugar mechanism.

Owari are my favorite, they produce a smaller very sweet seedless fruit, the skin separates from the fruit when ripe and it ripens later in the season, they are however not as tolerant the cold and can be a little challenging to get started

What is the age? Does it have "wildwood" going below the bud union? Take a pic and post it. I want to see the tree trunk below the leaf canopy.
DO NOT TRIM any citrus tree now. That will encourage and new growth bloom and they will get damaged in the cold weather.
If you are patience enough let the fruit stay on the tree until the first frost, give it a day or so then pick some.

De[ends on your location End of Jan to mid Feb or so. If its established, you just wanna "shape it" a little, that will promote new growth, the timing can be hairy if you catch a late frost that will burn back any new stuff.
But you should be good in that timeframe. Especially if its after a full moon, you will catch a cold snap around a full moon most of the time

mine in hammond are bright orange and super sweet. Based on years past I'd say they are about a month early for that
usually I leave them on the tree till the first chill

My trees are 2 yrs old and pretty small...Each tree does have ~15-20 nice sized satsumas though. I've have to cut sticks of bamboo to put in the ground/under the branches bc the weight of the fruits are dropping the skinny branches to the ground
