Potentially moving to the South shore, what are some good Pre k or Kindergarten schools? My daughter is 3, my wife and I are thinking about Ursuline and their program for girls her age. Any input would be appreciated.

Pre K doesn't start until they are four and K is five... Find a good church one for daycare.

3 year old programs are few & far between in NO. It's frustrating, and as a result many are difficult to get into or have waiting lists.
fun fact - Ursuline also lets boys into their 3/4 year old program! So does Sacred Heart. We checked out Ursuline; I liked it and they have a nice new building. But my wife didn't like it because they had too many computers and such, and she didn't think that was appropriate for a 3 yo. I nodded & agreed.

Why is having computers inappropriate?

How much you wanna spend? A buddy of mine has his daughter in pre-k at McGhee. It's a couple days a week a couple hours a day. They love it. But $$$$$$$$$$$$$$$$$$

Yea, a good daycare where they teach them a few things, or a good program at a school. I realize some can be expensive, just looking for some ideas.

Yeah you right, and exactly how much it cost.
OP, have you checked out Les Enfants at Trinity? That seems like exactly what you're looking for.
