MATT more than likely is a signal for a play. Most teams that use the no-huddle have cards that the quarterback can see and identify the play using said cards.

Those signs are codes for certain words. Those words make up a full playcall. For example:
means "32 Scotland 5 Hook Right Mustang". So #32 would run a 5-yard hook pattern on the strong side.

I would guess it's slightly more complicated than that. The card is easily visible to the opposing sideline, so all your opponent would have to do would be make a note of the card and see what play you run.
Either some of the cards (or some of the symbols on each card) are meaningless, or there's some other indicator that changes the meaning of the card and isn't so obvious. Like who's holding the card, or down and distance.
