I'm having this debate with a friend who happens to be myself and we can't agree on if the "s" is needed. Help me out. When or when do I not need the "s"?

Both are correct, when you are using it as an adverb, with the s is British English standard, without is American English standard

So as long as I am consistent in my particular body of work I'm good. But if I waffle I'm a hypocrite?

It just depends how consistent you are.. i'd think 50% max consistency would be okay. And the type of waffle you're doing is important, pecan waffling is an automatic -22% consistency. I'd advise not using syrup either.
