Food Board Shoppers: Meat Question

Do you buy organic, kosher, or air chilled chicken meat?
What about organic, grass-fed, or grain-finished beef?
What would be difference in the meat that doesn't have these labels and is actually cheaper?

Personally, I think organic chicken tastes better (never heard of air chilled chicken??)
I also like grass fed beef if you can find it, but it is pretty different from grain finished beef. You have to do some research before you cook it.

To me it doesn't have to be organic but free range birds do taste better to me. Like the chicken from my grandmothers yard. Air chilled means exactly that. They are not soaked in chlorine solution, they are becoming much more available and should not cost much more. I seek these out as well if buying a commercial chicken.
Grass fed is a different taste and texture. The American market is really about the only one using grain fed or corn fed beef and it is what we all pretty much grew up on. It cooks the same but the fat is a different flavor and texture. Corn fed can have a waxy taste in the top of your mouth while grass fed does not. I like them both and grass fed is showing up more and more as well.
I don't put a lot of stock in "organic" because a lot of that is smoke and mirrors anyway. I prefer to look at "sourced local" which to me is much better.

I've purchased both free range and air chilled from Alexanders and honestly (maybe it is how I baked it) I couldn't tell the difference.
I've also bought grass fed beef but wondered if it was worth the few dollar mark up at most places

I've made the switch with chicken and will only buy the (presumed) higher quality stuff and freeze it myself. I shop for all of our proteins and usually only get stuff from Alexander's or whole foods

Grain finished just means the last few months before slaughter they are fed grain to fatten them up.
They put pigs on concrete and feed them corn for a month to clean them out.
If you really want to find something different seek out some different pork. A lot of it out there now and that is one meat you most definitely can tell the difference. I like dark pork which is very rich.

My local Leblanc's doesn't carry anything grass fed, free range, or what not I am thinking of asking them for more options. Although if it is like beer that may take 2 months for them to oblige.

I've been told that "free range" and "cage free" are the same and don't mean anything.
