I wanted to take a minute and share this story with you all....

See if you can read the post made by this woman. The FB page is "Cheering for Breeana". The girl was diagnosed with a form of cancer a month or so before EJW was. They live in Prairieville and EJW grew quite fond of her story during his battle with cancer. He told me several times that he got a little comfort in him being a grown man battling cancer and couldn't imagine a child, or one of his kids having the same battle.

I'm told the donation that was made in the FB post was half of the contribution Smackover Hawg made for the pirogue built by FishFighter. Josey asked me to orchestrate half of the take back to FishFighter when he was watching the Benefit thread. FishFighter declined and this is where it ended up.

Please take a moment to say a small prayer for this beautiful girl and her family as they continue the fight.

Indeed it is. I love it. I could live off of smoked meat from this jewel.

I have one as well, but can't get quite as much smoke flavor as I do from the charcoal...is there some trick to getting the wood chips to smoke more?...

Open the top vent to get air moving. I always dump three loads of chips in it when starting. The flavor is intense when using this method.

Damn it I started to do one on pit today too. I love me some smoked chicken. I guess you can regulate the temp with ease on that thing. You pretty much throw them in and come back and pull them off in a couple hours or what?

Digital remote thermometer is the key. You set the temp at the desired smoking temp and it 100% maintains its temperature.
I usually smoke at 225.


The desired internal temp of chicken is 170 to 180F. The meat probe shown in the second pic is in the breast of the top bird. Notice the "meat probe" button on the remote above... The bird with the probe in it is currently at 135. When using this unit, you smoke to the desired internal temp.
