How long do you normally cook Brunswick stew? I have a pork butt on the smoker and will add some when it is completed but that will be about 5 hours. Is it ok the go ahead and start cooking the chicken/broth and let it simmer all day?

I think if you start now, you're just gonna end up with mush. FWIW, leftover pulled pork makes it even better than chicken.

Are you boiling the bird or using already cooked chicken?

I'd wait then. Like I said earlier, any pre-cooked meat or veggies are just going to get mushy. It's not one of those stews that needs to cook all day.
