So I got some good raw chorizo today, have some pablanos ready in the garden and picked up some oysters. Was thinking of dicing some peppers and topping oysters with a chorizo pablano mixture. Toping with some chopped cilantro.

Does that sound like it would work? Any suggestions?

Oysters Casino

Substitute your pablanos for the bell pepper and your chirizo for the bacon.

A little cilantro or purple onion diced. Maybe both. Two drops of lime. Nice little Latin char grill

I diced the pablano and some onion, sautéed, then topped with some diced tomatoes cilantro and a squirt of lime. It was good.
