When did the European tradition of away and 3rd kits of different colors begin?

I assume it's so old it hardly bother anyone at all.

It seems weird for those just coming into the sport to see clubs like Man U and Liverpool having blue or yellow away unis or Chelsea in orange, Barca in teal, Real Madrid wearing, really anything depending on the year.

Obviously in American sports, a team's secondary or away jersey is more or less an inverse, a white/black/gray jersey with the team colors in trim or just another variation but with the team colors. Wildly different colors are avoided (rivals colors avoided like the plague), used for very special occasions or retro throwback days.

I am not really sure. Most time united has a red, white, and other color (sometimes dark blue or black). So it doesn't change that much for them.

I like it for the most part though. It gives you a chance to buy a different color jersey or just a unique jersey. I would assume there is a $ merchandising reason behind it but that is the cynic in me.

Historically the home, and away kit used traditional club colors, and the third kit would be used as the away kit for European tournaments. Let's take Liverpool for example.

We all know that Liverpool wears all red in most matches. Traditionally in away matches where the colors would clash, they would wear the change kit, which includes white tops, black shorts, white socks. For Europe the away kit would be either all grays, or all yellows, or something 'different'.

Obviously in the spirit of making money, it is in kit manufacturerers best interest now to make 3 new kits for every club. To make it even more 'fun for the kiddies' they now use stupid colors which have nothing to do with club history. This started to really take hold in Europe somewhere in the late 90s, and since then has been made worse and worse every year.

Tl;dr: somewhere around when kit manufacturers realized how much money there was to be made.

Edit: here is a cool site where you can follow all the kit changes throughout the years for English clubs LINK
