Need help with chicken nugget idea

Ok, I got 2 large chicken breasts with bone and skin on. Slow cooked them in a crock pot. Made a nice gravy that I reserved for rice. After cutting it up I noticed that the texture is soft and Lucy will not eat it. She likes cripsy.

I've fried chicken from raw but never chicken pieces that were already cooked. Any ideas for breading and frying cooked chicken? TIA.

Is Lucy a human being?

If so, tough. She can go one meal without starving I am sure.

She was an only child. That's the only way I can explain it. I absolutely know that she won't eat it as is. My choice is between deep fry or cast iron skillet. Never done this with already cooked chicken.

Is this a gf or wife? If girlfriend then run like fire.

And this is a unique problem, I can really think of no other solution than some breading and a cast iron skillet.

Wife. I've got a cast iron skillet but don't know what breading to use with already cooked chicken. I've got eggs, panko, every spice in the world. No milk in the house. Got oil, butter and lots of time since I don't need to make it till 6 pm.

Cast iron will give the skin some crispiness I am sure. Not sure either on breading.

I guess I'm a little bit overly tolerant of her eccentricities. But I figure that will get me 10 years of indulgences in the after life.

Seriously...you're a saint for putting up with her food habits. If I had a man that picky with food he'd be gone after the first date.

Eggwash, panko and panfry it in that iron skillet. First, I would refrigerate the chicken to prevent overcooking it.

Oh yeah, you might want to remove the meat from the bone and pound out slightly if you can.
