Have an inexpensive gas grill I was given as a wedding gift that's rusting...

It's a stainless and wasn't the best quality. It still grills it's rusting arse off though and before I sink some cash into another one I though about sanding it with a heavy grade, wiping, smooth sanding and then coating it with a High-Heat Enamel Spray Coating.

Anyone got any pointers for the process other than recommending a charcoal grill with a blowtorch or a Viking Stainless Steel Outdoor Kitchen?

You may be disappointed because a lot of those pieces are not very thick and if the rust is too bad you may be trying to carve with rotten wood so to speak. The rust you see often just the tip of the iceberg. Anytime you get one of those grills the first thing you should do is go over the bottom chasis with a few coats of rust proof spraypaint. But you may get lucky. I used a wire brush drill head to clear out the crap on one of mine(not an inexpensive one but still wasn't rustproofed from the factory).

Your plan is not bad. I have a 30 yr old grill that was reclaimed from the end of a drive way waiting on the trash truck. Granted mine was made of heavy steel.

To get paint to stick you need ALL grease gone. So spray it down with engine degreaser, rinse with water, then wire brush off all the loose rust. Degrease again, rinse with water, and heat to dry. Then apply naval jelly (use gloves) let dry and then paint with hi temp paint.

Good luck.

So I washed, degreased twice, dried, sanded, rinsed, dried, naval jellied, washed again and it's drying now. Paint comes next.

Thanks for the suggestions. The naval jelly is going to be of great use later on with a lot of other projects as well.
