I have to go with MLB, but that's probably just because I'm a bigger MLB fan than of the others.

MLB, then NBA.
Most NFL player seem to never do as good with their second team to me. Obviously there are some exceptions.

NFL free agency is the worst imo. Don't follow hockey.

NBA because the draft is about a week after the finals and then free agency is a few days after the draft. Everything is still so fresh at the time. I also feel like you see bigger names move more often and teams can be completely overhauled or dismantled.

European soccer. I know I'll get raked over the coals for that here but it's the truth. Insane amount of rumors and money moving around. No other sport comes close to the amount of stars that will change teams in one offseason/window.
MLB trade deadline is a close second.

EPL. You get the craziest rumors, teams coming in at the last second to steal a player, crazy prices, clubs agreeing on a fee but the player rejecting it, etc.

NFL by a very wide margin for me. I love baseball, but have very little interest in most of the moves that are made. Plus my love for college football makes the draft fun for me.

NFL free agency is always wild IMO.
