Butternut squash. To peel or not to peel?

Going to sautee.

All recipes say to peel. Why? I've never peeled yellow squash. Why is this different?

Tougher. More bitter skin. Definitely peel.

Really, don't have any specifics, but I will say that yellow asparagus needs to be peeled while green doesn't. Tough skin is the factor.

Might be the same thing in the squash department.

Peel.

It's much different. Much harder. You are sautéing it without roasting it first right?
