Tech Help: AT&T Iphone Unlock question

I am trying to sell my wife's old iPhone 4s and wanted to factory unlock it before selling it. I sent the request to AT&T and they confirmed it can now be unlocked (in 24hrs). The instructions they sent said to back the phone up, then reset the device, then restore. However, it's not clear to me how I will know it's unlocked since the SIM card has essentially been deactivated (wife is already using her new phone; old phone has no service).

I tried searching the internet and can't find anything that helps. Anyone have experience doing this with an old iphone? Do I need to use one of the SIM cards from our active phones?

I had my wife's unlocked. It will tell you in iTunes during/after restore.
