Fajita recipe

Anyone have a good fajita recipe?

Marinate blade steak overnight in a fajita seasoning packet. I used olive oil and a packet forever but Jones turned me on to a liquid you can find with the seasoning.

Fire up the charcoal. Put a cast iron skillet on the grill to get good and hot. Cut up a couple onions and a few bell peppers (I use orange, yellow and red...I know it cost a couple dollars more but I'm worth it.) Toss cut vegetables in olive oil...season (again I use the pre-packaged) and throw them in the pan. When the are getting close throw the steak on the grill. Remove meat and let rest. Finish vegetables. Slice meat against grain and serve on your favorite tortilla with your favorite accoutrements.

I know it's not really a recipe. I do this every couple of weeks at least.

That is as good as a recipe. Do the vegetables really take longer than the meat? I wasn't expecting that.

Cast iron skillet with olive oil on stove top. Get flank steak, chicken breast or thighs, shrimp and anything else you want. Also red onion, bell pepper, and jalapeno if you like spice. Julienne peppers and onions and seed and slice jalapeno's then coat skillet with oil and saute' veggies for approx 7 mins (a little less if you like some bite). While veggies are grilling season with salt, pepper, cajun seasoning, ground cumin, ground ancho chili powder and throw in a tablespoon of minced garlic. Move veggies to side of skillet and grill seasoned protein until done. (approx 3-5 mins per side) I like my flank medium rare so I go less time. Get a separate skillet and coat with butter (1 tbsp). Grill tortillas for approx 20 secs per side to get them slightly crisp and hot. I dress with sliced avocado, homemade Pico, pickled jalapenos, sour cream, sweet corn, and shredded cabbage.

buy frozen precooked fajita steak from Wal-Mart
brown Guidry Cuts and a sliced up bell pepper in a frying pan in some oil. Throw the steak in and season to taste, maybe melt some cheese on top. Throw it on tortillas with sliced tomatoes, lettuce, olives, and maybe some avocado, and you've got dinner for the whole family in less than 30 minutes.

I do a lot of veggies and like them firm but tender. Not crunchy at all. They take about 15 minutes for me to get right.

My skillet is piled high to the top so they aren't all getting direct heat the whole time.
