Firehouse BBQ in Watson -- brisket

Just got a pound to do sandwiches for lunch. It is really very good. I have not had better anywhere in the BR area, and I have looked. What constitutes good brisket? To me, it has decent bark with a lot of flavor, it is tender to the point of falling apart, lots of smoky flavor in the meat, doesn't really need sauce, and is moist -- they toss a small cup of the collected cooking juices over the meat when they slice it. I just don't think it could be much better.

On 16 just South of the new Walmart in a strip center with Papa Johns.
