Never heard of it also, but if you are going to attempt such then use a bunch of pork and sausage in it as gator alone is going to be dry as a desert in terms of moisture and at content go.

It's going to be like eating work boots.

ETA: If you want to cook different jambalaya, rabbits or doves are a good thing to try with.

If you want to cook alligator, sauce piquant is a good thing to try.

I'd try the alligator jamb by myself at home before I tried cooking it for other people.

Has anyone ever brined gator meat? Seems like it would help keep it from drying out, kind of like white meat chicken and turkey.

Meh, it's a fun conversation piece for a tailgate.

Consider using alligator sausage-pretty widely available around BR (AG stores, Winn Dixie). He mixes enough pork with it that it would do well in jambalaya, and if the run-up in prices on frog legs before the TCU game is any indication, gator meat is likely to be pricey this week.

I've never used straight gator tail meat in a jambalaya, but Murray's in St. Amant makes an incredible green onion gator sausage that tastes great in jambalaya or on a po'boy.

If you do end up doing this, please let me know how it turns out, pics if possible. This sounds awesome if it works.

I went to a tailgate a few years back (friend of a friend of a friend, I dont know whose tailgate) for the Florida game and a guy was cooking some. I stood by, watched, asked some questions, but forgot most everything. It was unbelievably good. Doubt I'll be able to replicate it.

Cooked a variation of this 4 years ago for Florida. Started with his recipe then screwed around as one typically does whilst drinking and cooking. Came out fantastic. So last weekend I did a trial run for some friends and once again, awesome. Doing it this weekend.

Try to get some jaw meat. It tends to be a little more tender.

Also I wouldnt brown it. Just toss it in 5-10 minutes before you add your stock and rice.

I don't mind it, but there's a whole lot of other stuff that I'd rather eat.
