Best Knife Sharpener and cleaning methods


I was going through some old boxes at my Mom's and came across some old knives. Pocket knives and a few fix bladed knives. Any recommendations on a good sharpener and methods to clean these old boys up? Not rusty but the pocket knives could probably use some oiling. So I guess I need something that can sharpen both type of blades. Also, serrated blades? I have a sharpener with my kitchen set but something is telling me not to use that shite in this occasion.

If you genuinely have an interest in sharpening your own knives, first do plenty of research. Believe it or not, youtube is a pretty good source for this, look up Mr EZ Cook's sharpening videos.

Invest in a 3 stone system, coarse (250 grit), medium (1000 grit), and fine (4000+ grit) plus a strop (you can make one for very cheap...just leather and some wood+glue). That will get you started and you can work on your technique. Once you get the hang of it, you can determine if you want or need additional stones.

I use 250 (if the knife is blunt), 1000, 4000, 8000, Surgical Black Arkansas, Translucent Arkansas, and a 2 strops...one with green compound, one with bare leather).

I can get my knives shaving sharp, although I'm far from a sharpening guru. It's definitely a skill you have to develop over time and practice.

Yeah I've been researching a bit. I'll check out some videos. Looks like stones are the way to go.

electric sharpeners like that can work, but be careful using them. You don't want to heat the edge up too much or it will become brittle.

I am pretty good at sharpening my own knives but have never used a strop. Could you point me in the right direction on getting one? I usually purchase knives by whether I feel like I can sharpen them myself. I guess that is why I am a fan of the old yellow handle Case knives.

I think they make 2 a month

I think his basic knives start at 4-5k with nothing really done to them. His system is legit, like said in here stone is the way to go.

You can use an old leather belt if you want! Seriously it will work just fine.

Or you can locate some untreated leather (that shiny waxy leather in dress belts and shoes is treated) and glue it to a block of wood

Or if you just want to be lazy like me, you can order them online.

Amazon has some. I got mine from Bark River knives LINK

I would highly recommend using one though. If you're already proficient with sharpening, a strop will make your knives that much sharper.

Yeah, it is slow speed and it works great. I dont use one I learned to sharpen on a stone as a kid and thats all I do

A purpose built strop is "better", in the sense that it is more suited for the activity and thus more efficient...however with patience the end result will be the same if you use a belt.

Like using a garden trowel vs a shovel to dig a 2 foot hole. Both will get the job done, but one is "better".

Get you a work sharp knife sharpener...... about $80 and does a real fine job. Easy to learn too.
