Boudin and eggplant recipe

I have eggplant and boudin - looking for something new to do with them. Don't have to combine them. Any suggestions? Thanks!

Why not? Doctor it up a little with some onions, etc and give it a try. Should be delicious!

Cube the eggplant, cook it down in a frying pan seasoned.
Mix 6 raw eggs toss them in to scramble on the eggplant..Un-case the boudin and add when the eggs start grabbing...
