Can this combo of pork, beets & cabbage result in a good meal?

Our oven is not working. A week or so ago the self cleaning feature of the top oven was used, and some component broke, making us unable to unlock the top oven. The bottom oven opens, but whatever is broken in the locking feature prevents the bottom oven controls from working.
Yesterday I bought some beets from the farmer's market, thinking I would roast them. Haha, forgot about the non-working oven. I had already purchased a pork roast the day before, as well as some cabbage (with no intention of using them together). Today I decided to put all three in the crock pot.
I'll take pics of the finished product and add to the post, but here's what has happened so far.
(deglazed with apple cider vinegar and red wine)

From what I've seen on this board you can turn anything into a fabulous meal darla.

I have to be honest and say that I've never cooked fresh beets before. If these are good, borscht might be next on the list!
I thought beets were a winter vegetable. Was surprised to see them at the farmer's market.

That looks really nice. The sweet of the beets vs the cider vinegar makes for a nice contrast in flavor.

Final product:
Not particularly photogenic, but the pork roast is delicious! Beets and cabbage are good, could use some work on adjusting flavor. Not sure if it's the caraway seeds or the apple cider vinegar or what I need to change, but it's not balanced.
