How to freeze fresh tuna

A friend gave me some fresh tuna caught yesterday. It has been on ice since yesterday. What's the best way to freeze it?

Do NOT rinse it...cut it in desired size steaks and vacuum seal it

Vacuum pack it!
I prefer to leave the loins intact. This minimizes the surface area exposed and allows you to slice later depending upon what meal you are preparing.

ETA: I've also found it easier to vacuum seal one large piece of flesh rather that several smaller ones in the same bag.

If you don't have a vacuum sealer, wrap in Saran Wrap the drop in ziploc. Submerge the ziploc in water to get all the air out.

I wrapped in seran wrap and it worked great. I have about one half gallon bag left of tuna steaks out of 5 gallons.
