In need of a recipe for turtle

I recently caught a nice turtle and am looking to cook him up tomorrow . Anybody have any good recipes ?TIA

How much meat have you harvested from it? If there seems to be enough to get a sauce piquant and also a soup, then look at Treedawgs recipe for piqaunt in the recipe thread above for the first. If you want to get the most out of the turtle, then buy a couple of lbs of gator to add to it in the pot. The soup will reqiure a food mill/meat grinder for the turtle to make into small bits along with some ground veal. The soup will also require a bottle of dry sherry.
