Why do you like the music that you like? What is it that makes a song appealing to you? Is it the beat, the lyrics, the melody, the hook, the artist? What is it about a song that grabs your attention to where you go "Hey, I really like this."
For me I'm a big fan of vocal melody. For instance, I much prefer the vocal melody on Deftones - Swerve City to the screaming found on Deftones - Nosebleed

Seems like it would limit your music selection greatly. Lyrics are the least important aspect of music for me. I like melodies and their interplay. Layers and transitions are swell, too. I guess I like dense but harmonious music that can hold my attention. Brian Wilson is (was) the master.
Surf's Up is a good example.

Vocal melody having at least some relationship to the instruments. The reason I hate Don Henley songs is the music just appears to be something random in the background that plays while he sings a different song.

Lyrics are the biggest draw for me. Followed by HOW they sing it. The singing doesn't have to be good. In fact, I tend to like bad singing better (Silver Jews, Modest Mouse, Bob Dylan, Bright Eyes, Pavement). But I want to believe that they believe what they're saying.

it really doesn't. there are songs i like that talk about slingin rocks and driving benz's with 24" spinnin rims. but songs i love, i can relate to.

I don't think it has anything to do with a predisposition at all, and everything to do with culture. As a musician myself, I'm convinced that we are influenced by everything that we hear from our favorite music to the melody your doorbell chime plays. And, what we hear is predominantly driven by culture.
That's why Indian music sounds like Indian music, African like African etc. After all you don't see many hair metal bands out of Zimbabwe do you?
To me what makes someone a real musician is the ability to take the way they have been cultured and the music that entails, blend that with other influences, and spit out their own take on the whole thing.

The things that artists do that make your hair stand up on the back of your neck, head. That is when I know I like something a lot. It is hard to put into words.

The overall sound and mood of the song. The beat, harmony, hook all play a part. I am not a big lyrics person. I view the voice as just another instrument and how it pairs up with the song. I don't have to know everything the singer is saying.
