I like to have multiple knives available. One with a hook for the skin. Another smaller one for caping type cuts. I have two Buckmasters sets that are actually quite good. Something like:

Two weeks ago I was recommended the Cutco Skinning knife. Bought it last week but have not used it yet.

The big heavy blade helps with joints. I don't use a saw at all. I cut off hocks/legs at the joint. Even the hams.

Buck 119. You can never go wrong with a Buck Knife. They stay sharp and are the best made knives out there.

Eh, they're easy to put a razor edge on, but after a few deer you'll have to hit it with something again. It's not bad though, they do work and sharpen quickly

For a fixed blade knife, considering the cost, it is the best knife out there without spending a ridiculous amount of money.

I owned one Buck. Was my first knife. Was sharp as shite out of the box. I never could sharpen it though. Gerbers have been the easiest for me to sharpen, but I may just suck at it.

I have one Gerber I can't sharpen worth a damn. My bucks get an edge quick, but also lose them quick.
