1 tsp pure canola oil
1 cup diced onion (i went half white/half red)
16 oz drained/rinsed black beans
16 oz drained/rinsed navy beans
1 tsp cumin
4 oz green chilies
6 oz tomato paste
2 cups low sodium chicken broth

saute onions in oil for around 5 minutes. add broth, beans, chilies, paste, and cumin. stir and bring to boil. reduce to low heat and let simmer for 10-15 minutes. stir occasionally.

i added some shredded mozzarella and cheddar on top with some small avocado slices. delicious.

makes 6 1 cup servings.

IWEI

I've made a similar recipe with black beans, kidney beans and corn. And salsa. All good.

That does sound really good.

I'm going to have to try that soon. It seems simple enough for me to not screw it up.
