I have limited knowledge in biomechanics, but in watching the replay, a few interesting points come to mind:

He never tries to secure the ball with both hands. Instead, he keeps his left hand up all the way to the ground. Why? Sorta like a bull rider keeping his hand out to stay in position above the bull, he was using the left arm to allow him to remain airborne in a supine position, and hit the ground on his back. Had he tried to catch it with both hands,I think it would have resulted in him twisting in the air, like when an ice skater or diver tucks in their hands in order to twist. Then, he would have landed on his abdomen, possibly popping the ball loose, and/or making it difficult to see if he had possession in bounds. Instead, he first stops the forward motion of the ball by making contact with the tip of the ball, since he is unable to grasp it with 2 hands. Finally, he tucks it in on his back with one hand, all before hitting the goal post!

What a play!

BTW he has a sweet youtube training video from a couple of years back.

The catch was awesome. But I've seen him make more awesome catches many times in high school. I remember a one hand catch he made while laying out at the goal line. He caught the ball literally 3 inches from the ground with his left hand. And there was this one catch against ED White in the playoffs he made in the corner of the end zone that was just sick. I think there's a YouTube of that one. My brother said Jarvis rarely used two hands in practice while at Lutcher. Coaches would get on him sometimes for it. But it's hard to get on a player like that.

The making of a 5 star player. Dude has serious skills to go with his proven toughness showcased on special teams last year. Not easy to find in combination.

I see why a coach may tell him to use both hands, but I don't know that this would have resulted in a completion.

Yes agreed. He had to use one hand there. I'm just saying that he would use one hand on perfectly thrown balls.
