Makin some boudin this weekend from scratch and have a qwerstion.
Can I smoke the butt and livers before simmering in stock pot?

Any other tips would be greatly appreciated.

You could.. Im not sure if you would get anything out of it though. Most of that smoky flavor will get taken out by the stock pot. Why not just smoke it until its slightly overcooked then shred and no put in stock pot?

you should be fine as long as you use liquid to boil rice after the meat is cooked
