Do I have to watch every match my first team plays? I just got this game and I am a bit confused.

No, if you look in the upper right corner there should be a box that will let you select goals only or key plays.
I usually leave it on key plays but for important matches I'll watch the final 20 mins or so.

Yep. Or for ones you want to "simulate", you can go to commentary only, jack up the speed, and turn off replays.
