cutting hind quarters

Im trying to figure out how to cut this damn hind quarter from this deer meat. I need some assistance

I'm guessing you haven't tried the method of cutting the meat from the bone while the deer is still hanging from the grambling.

3 big muscles, clean those up good.... will be some stew meat off of those 3, before you steak those 3. hard to splain, without showing ya.. sorry..

Well it would have to have been for the future anyway. You'll save yourself a frickton of time and pain instead of having to mess with that ice cold hind quarter on your counter making your hands feel like they have frostbite.

If you use a filet knife, you're gonna follow the muscle line like another poster was trying to explain.

That is the best way to 'try' to explain it. But if you follow the muscle lines, you won't frustrate yourself, or demolish the nice roasts.
